Honey Mustard Cobb Salad

Who doesn’t freakin’ love a GOOD cobb salad? This version hits just right with 3 key ingredients: grilled corn, feta cheese (instead of blue cheese), and a sweet & tangy honey mustard dressing. Cobb salad is a PERFECT make ahead meal. Great for lunch or a quick, comforting dinner.

Ingredients

Salad
2 chicken breasts (grilled or pan fried)
6 pieces of bacon
1 head of lettuce
¼ of a red onion
4 eggs
1 cup corn kernels
½ cup feta cheese
1 avocado
Dressing
¼ cup honey
¼ cup Dijon mustard
¼ cup mayo
1 tbsp white vinegar
Sprinkle of salt & pepper

Directions

1. Cook chicken (either grill or pan fry); dice into cubes.

2. Cook bacon and chop.

3. Boil eggs (For hard boiled, add eggs to boiling water and set the timer for 10 minutes. Remove and immediately run cold water over eggs until cooled).

4. Cook corn in olive oil over medium heat, stirring often until it is nicely charred.

5. Chop lettuce, red onion and avocado.

6. Whisk together dressing ingredients.

7. Assemble bowls starting with lettuce, chicken, bacon, red onion, avocado, egg and crumbled feta cheese.

8. Toss well with dressing and enjoy!
