Quick Mango Salsa Salmon Bowls

A delicious weeknight dinner that is BURSTING with flavour. This mango & avocado salsa comes together in just minutes and is so good paired with salmon, rice and spicy mayo.

Ingredients

Salmon
2-3 salmon fillets
½ tsp salt
½ tsp pepper
½ tsp paprika
½ tsp garlic powder
1 tbsp soy sauce
¼ cup mayo
2 tbsp hot sauce
Cooked rice
Avocado oil
Mango Salsa
2 mangoes
2 avocados
1 jalapeño
¼ of a red onion
1 lime
½ tsp salt

Directions

1. Cook rice as per package instructions

2. Prepare mango salsa by dicing mangoes, avocados, jalapeño and red onion. Toss in a bowl with lime juice and salt

3. Pat dry salmon; remove skin and cut into cubes

4. Toss salmon cubes in a bowl with soy sauce and spices

5. Heat a large skillet with avocado oil

6. Once hot, add salmon cubes and cook 2-3 minutes per side until cooked through and nicely charred. You may need to do this in batches as you don't want to overcrowd the salmon

7. Whisk together mayo and hot sauce

8. Assemble bowls starting with rice, mango salsa, and salmon. Drizzle with spicy mayo and serve
