Ingredients
3 medium russet potatoes
1 tsp salt
1 tsp pepper
½ tsp garlic powder
½ tsp paprika
¼ tsp cayenne (optional)
½ cup shredded cheddar cheese
5 bacon strips, cooked
¼ cup diced green onion
Directions
1. Preheat oven to 400°F
2. Scrub potatoes clean and slice into ¼ inch rounds
3. Add potatoes to a large bowl and toss with a generous drizzle of olive oil and spices
4. Spread apart on a lined baking sheet and bake for 30 minutes
5. Flip and bake another 20 minutes until slightly crispy
6. Shred cheese, crumble bacon, and chop green onion
