Sheet Pan Fajitas

One of our favourite weeknight dinners! Consider buying premade taco seasoning to make this dish come together even quicker. You can also prep everything ahead of time and simply throw it on a baking sheet and bake. Leftovers are best reheated and served over greens as a fajita salad.

Ingredients

2-3 chicken breasts
3 bell peppers
1 onion
2 tbsp taco seasoning (or make your own with 2 tsp cumin, chili powder, 1 tsp smoked paprika, oregano, garlic powder, dash of salt and pepper. Option to add chili flakes or cayenne for a little kick)
¼ cup olive oil
1 lime
Tortilla shells

Toppings: shredded cheese, salsa, mashed avocado, Greek yogurt

Directions

1. Preheat oven to 415°F

2. Pat dry chicken and slice into thin strips

3. Wash and slice peppers

4. Add veggies and chicken to a large baking sheet

5. Drizzle with olive oil and spices

6. Mix will (I use tongs or clean hands)

7. Arrange into a single layer

8. Bake for 25 minutes

9. Remove and drizzle fresh squeezed lime juice

10. Prep your favorite toppings such as shredded cheese, sliced avocado, salsa, or Greek yogurt

11. Let everyone build their own fajitas
