1. Divide beef into 4 and roll into balls
2. Shred cheese and prep toppings of your choice
3. Heat a large skillet over medium heat and add 2 beef balls spread apart
4. Place a tortilla on top of each ball and press down (a grill press works great or something heavy)
5. Cook for about 4-6 minutes and flip
6. Add cheese and jalapeños; cover with a lid for a few minutes until cheese has melted
7. Remove tacos and place on paper towel for a minute to absorb some of the grease
8. Add lettuce, sauce, and any other toppings you love. Enjoy!
