Chopped Orzo Salad with Burrata

Ingredients

Orzo Salad
1 cup orzo
2 cups water (or broth)
2 colorful bell peppers, diced
1 tomato
½ a large cucumber
¼ cup chopped green onions
¼ cup chopped basil
Dressing
¼ cup olive oil
2 tbsp red wine vinegar
2 tsp maple syrup
1 garlic clove, minced or grated
1 tsp paprika
Salt and pepper to taste

Burrata cheese

Directions

1. Cook orzo as per package instructions; drain and let cool

2. Wash and dice your veggies: bell peppers, tomatoes, cucumbers, green onions, and basil

3. Whisk together the dressing ingredients

4. Combine orzo, veggies, and dressing in a large bowl

5. Top with fresh burrata, extra olive oil, sea salt, and chili flakes
