1. Combine all crêpe ingredients and whisk until a smooth batter is formed (it should be very thin so don’t worry if it looks watery)
2. Heat a large non-stick pan and drizzle with olive oil
3. Once hot, use a ⅓ measuring cup scoop and pour mixture into pan. Swirl the pan so the batter coats most of the pan
4. Cook each crêpe 2-3 minutes per side. Use a spatula to gently flip the crêpes
5. Place ready crêpes into the oven to stay warm
6. Prepare your toppings. Whisk the eggs and cook in a hot pan for 2 minutes, flipping with a spatula
7. Slice avocado, shred cheese and get your salsa ready
8. Fill your crepes, fold, and serve!

Yay! Glad you like them!
Such a versatile and easy recipe that looks and tastes 5 star whichever way you make it! I’m not that great of a cook myself and my boyfriend was so impressed when I made these! Will definitely make these crepes again!
Amazing! Thanks so much for sharing!
Put avo and cheese on anything and I’m sold! 🙌🏻🙌🏻
