Chicken Nugget Caesar Salad

There is something so comforting about a classic Caesar salad. Now picture that but with CRISPY, CRUNCHY CHICKEN nuggets on top! Yes I'm shouting because this idea is just so dang good. I loooove making my own homemade Caesar salad dressing and have been doing so for years! It's honestly easy and I bet you have most of the ingredients on the ready! Homemade croutons are not needed but a nice touch! This is guaranteed to be a crowd pleaser if hosting or just a delicious and comforting weeknight dinner.

Ingredients

Salad
1 head of romaine lettuce
3 cups cubed bread (or 2 cups of store-bought croutons)
¼ cup parmesan cheese
12 chicken nuggets
¼ cup olive oil
1 tsp garlic powder
2 tsp Italian seasoning
1 tsp chili flakes (optional)
1 tsp salt
1 tsp pepper
Dressing
⅓ cup mayo
1 anchovy
1 tbsp Dijon mustard
1 tbsp olive oil
½ lemon, juiced
1-2 garlic cloves minced (depending on your garlic preference!)
3 tbsp grated parmesan cheese
½ tsp salt
1 tsp pepper
1-2 tbsp cold water (depending on how thick or thin you like your dressing)

Directions

1. Preheat oven to 375°F

2. In a large bowl, combine bread, olive oil and seasoning. Toss until well incorporated

3. Spread bread on a large baking sheet and bake for 18 minutes, shaking halfway through

4. Cook chicken nuggets (either bake or air fry)

5. Wash and chop lettuce

6. Add dressing ingredients to a bowl and whisk together until well incorporated

7. Once chicken nuggets are cooked, slice into strips

8. Assemble salads with lettuce, croutons, and chicken nugget strips. Drizzle with dressing

9. Option to serve with extra parmesan cheese
