Cinnamon French Toast Bake

An easy, hands-off sweet breakfast that will leave you and your guests wanting another slice or two! Perfect for hosting brunch or meal prepping. Top it your way with a handful of your favourite fresh berries.

Ingredients

½ a French bread loaf, cubed
6 eggs
2 cups almond milk (or milk of choice)
2 tsp vanilla
1 tbsp cinnamon (divided)
1 tsp sea salt
Maple syrup and fresh berries for serving

Butter Sauce
⅓ cup vegan butter (or regular butter)
½ cup coconut sugar
1 tbsp cinnamon

Directions

1. Preheat oven to 425°F

2. Grease a large rectangular baking dish

3. In a small saucepan add butter and heat until melted. Add coconut sugar and cinnamon; stir

4. Add half of the butter sauce to the bottom of the baking dish and spread evenly

5. Cube your bread and spread evenly on the baking dish

6. In a medium bowl, whisk together eggs, milk, cinnamon and salt

7. Pour egg mixture over bread and gently stir until fully coated

8. Drizzle remaining butter sauce on top

9. Bake for 25 minutes and broil for 2 minutes to get the top nice and toasty

10. Serve with maple syrup and fresh berries
