Sweet Potato Black Bean Quesadillas

A delicious vegetarian dinner for the whole family to enjoy! The sweet potato and black bean combination is so tasty, you can use it as quesadilla stuffing or even making little burger patties to enjoy with salads. I love prepping the sweet potatoes ahead of time and then just mashing with beans and assembling quesadillas. Super easy, flavourful and customizable - add any additional toppings like avocado OR keep it easy with just cheese!

Ingredients

2 medium sweet potatoes
2 tbsp olive oil
1 can black beans
2 tbsp taco seasoning
1 cup shredded cheddar or mozzarella cheese
2 green onions
1 jalapeño (optional)
Tortilla shells

Directions

1. Preheat oven to 400°F

2. Peel and cube sweet potatoes

3. Add sweet potatoes to a bowl and drizzle with olive oil and taco seasoning

4. Spread on a large baking sheet and roast for 40 minutes

5. Drain and rinse black beans

6. Shred cheese and dice green onion and jalapeño

7. Add roasted sweet potatoes to a bowl with black beans. Using a potato masher, mash until the ingredients are well incorporated

8. Turn up oven temperature to 415°F

9. Place tortilla shells on a lined baking sheet and fill one side with cheese, black bean sweet potato mixture, veggies, and more cheese

10. Spray with cooking oil and bake for 10 minutes
