Easy Taco Bowls

Always on rotation in our kitchen, this weeknight dinner delivers BIG on taste. Swap in different vegetables or protein to switch up the flavours and make it feel like a brand new dish!

Ingredients

1 lb. ground beef
2 tbsp taco seasoning
¼ cup water or broth
1 head of lettuce
1 cup cooked rice (optional)
1 cup guacamole (store-bought or homemade)
1 cup salsa
1 cup shredded cheese
2 green onions
1 jalapeño
Olive oil

Directions

1. Heat 1 tsp of olive oil in a large skillet on medium heat. Once hot, add beef.

2. Cook beef, breaking it into smaller crumbles with a wooden spoon for 5 minutes, or until no longer pink.

3. Add taco seasoning and water or broth to skillet. Stir and simmer for 2 minutes until all the liquid has evaporated.

4. Wash and slice lettuce, green onion and jalapeños.

5. Assemble taco bowl with lettuce, beef, rice, guacamole, salsa, cheese, green onion and jalapeños.
