French Onion Gnocchi Skillet

Not exactly sure where to start except for WOW - this dish will blow your mind and taste buds! It screams comfort food! Picture a cozy bowl of French onion soup but instead of the bread you have little pillowy gnocchi? YES, sign me up!

Ingredients

3 medium onions
2 tbsp butter
¼ cup olive oil
1 pack gnocchi
1 cup broth
1 tbsp balsamic vinegar
1 cup shredded cheese (I did a combination of mozzarella and Gruyere)
1 tsp salt
1 tsp pepper
½ tsp chili flakes
Chives for garnish

Directions

1. Peel and slice onions into halfmoons

2. Add butter and oil to a hot skillet

3. Once butter has melted, add onions and cook on low heat until they are nicely caramelized (stirring often). Season with salt, pepper and chili flakes. This will take around 15-20 minutes. If needed, add an additional drizzle of oil to prevent onions from burning

4. Shred cheese and dice chives

5. Once onions are cooked, add balsamic vinegar and package of gnocchi. Cook for 2 minutes, stirring continuously. Add in broth and cover with lid for 5 minutes

6. Remove lid and stir. Continue to cook for another 5 minutes until the liquid has evaporated

7. Top with cheese and broil for 2 minutes in the oven

8. Top with chives and enjoy immediately
