Ingredients

1 can black beans
1 cup uncooked cous cous
1 pint cherry tomatoes
⅓ cup red onion
⅓ cup cilantro
1 jalapeño
1 avocado
¼ cup olive oil
1 lime
1 tbsp taco seasoning

Directions

1. Cook cous cous according to package instructions

2. Dice onion, tomatoes, avocado, jalapeño, and cilantro

3. Drain and rinse black beans

4. In a large bowl combine cous cous, beans, and veggies. Add olive oil, lime juice and taco seasoning

5. Toss until well incorporated
