Substitutes: Soft-boiled eggs, poached eggs, fried eggs, or scrambled eggs. For a vegan option, try marinated tofu or chickpea scramble.

Substitutes: Sourdough, whole wheat bread, multigrain bread, gluten-free bread, English muffins, bagels, or sweet potato toast.

  • Take 2 eggs out of the fridge and let them warm up for a few minutes
  • Add water to a small saucepan and bring it to a boil
  • Once boiling, gently drop in eggs and set your timer for 6 ½ minutes
  • During this time, prep a bowl with cold water and ice (sometimes referred to as an ice bath)
  • Toast your bread and top with half an avocado on each side
  • Once the timer goes off, remove eggs using a slotted spoon and place them directly into the ice bath
  • After a few minutes remove eggs and peel
  • Slice in half lengthwise and top your toast. Season with spices and enjoy immediately
