Easy Broccoli and Sausage Pasta (Weeknight Comfort Made Simple)

If you’re craving a comforting pasta dinner that doesn’t require a long ingredient list or hours in the kitchen, this Easy Broccoli and Sausage Pasta is exactly what you need. It’s one of those back-pocket recipes that feels cozy and indulgent, yet is simple enough for a busy weeknight. Savory sausage, tender broccoli, and perfectly cooked pasta come together in a light, buttery sauce that clings to every bite—no cream required. Simple ingredients always make the best pastas. I learned that when we travelled through Italy. I love creating sauces from a ton of parmesan cheese, a little butter and pasta water. Best part? Very kid/family friendly. My 3 year old ate an entire adult serving. She really loved it! Leftovers were perfect for lunch the next day (if you should be so lucky to have any hehe).

This is the kind of meal that proves simple food can still be incredibly satisfying. It’s hearty without being heavy, packed with flavor, and made with everyday ingredients you probably already have.

Why This Pasta Works So Well

The magic of this recipe is balance. The richness of Italian sausage pairs perfectly with fresh, slightly crisp broccoli. Garlic adds depth, parmesan brings salty umami, and a splash of reserved pasta water creates a silky sauce that coats everything beautifully. It’s comfort food that still feels fresh—and it comes together in about 30 minutes from start to finish.

The Bottom Line

This Easy Broccoli and Sausage Pasta is the kind of recipe you’ll come back to again and again. It’s quick, comforting, flexible, and deeply satisfying—perfect for weeknights, meal prep, or when you just want a bowl of something warm and familiar. Simple ingredients, big flavor, and minimal effort… exactly how dinner should be. Definately add this to your weeknight dinner rotation or consider making an extra big portion for a dinner party! You could serve a simple chopped salad on the side and everyone will LOVE it. You can prep the ingredients ahead of time then toss everything together with fresh pasta. Easy peasy! This dish is perfect year end. In the winter it’s just cozy enough and in the Spring/Summer the broccoli gives it such a nice fresh touch.

How To Make easy broccoli and sausage pasta

The Ingredients

Ingredient Breakdown & Substitutes

Small Shell Pasta
Small shells are perfect for this recipe because they trap bits of sausage and sauce in every bite.
Substitutes: Penne, rotini, orecchiette, farfalle, or whole wheat pasta. Gluten-free pasta works well too—just cook carefully to avoid overcooking.

Ground Italian Pork Sausage
Italian sausage brings bold, seasoned flavor and richness to the dish, forming the backbone of the sauce.
Substitutes: Chicken or turkey Italian sausage, plant-based sausage, or ground meat with added Italian seasoning and fennel.

Broccoli
Broccoli adds color, texture, and a fresh contrast to the savory sausage. It also makes the dish feel more balanced and filling.
Substitutes: Broccolini, cauliflower, Brussels sprouts, spinach (stirred in at the end), or kale.

Garlic
Garlic adds warmth and depth, tying all the flavors together.
Substitutes: Garlic powder (about ¾ teaspoon), roasted garlic, or shallots.

Shredded Parmesan Cheese
Parmesan adds salty, nutty richness and finishes the sauce.
Substitutes: Pecorino Romano, Grana Padano, or nutritional yeast for a dairy-free option.

Butter
Butter creates a glossy, rich base for the sauce without overpowering the dish.
Substitutes: Olive oil, dairy-free butter, or a mix of olive oil and a little extra pasta water.

Reserved Pasta Water
Starchy pasta water helps emulsify the sauce and pull everything together.
Substitutes: Chicken broth or vegetable broth (though pasta water works best).

Salt & Pepper
Essential for seasoning and enhancing all the flavors.
