  • 2 bell peppers, sliced (any color): Substitute: zucchini, mushrooms, or even pre-cut frozen pepper blends
  • 1 small onion, sliced: Substitute: red onion for a slightly sweeter flavor, or omit if preferred for toddlers
  • 2 tablespoons taco seasoning (you can make your own, my favorite brand is Siete taco seasoning): Substitute: homemade blend (chili powder, cumin, garlic powder, paprika, oregano, salt)
  • 2 tablespoons olive oil: Substitute: avocado oil or any neutral cooking oil

For Serving:

  • Tortillas (flour or corn): I used mission street tacos tortillas (love how little and soft they are) or Siete almond flour tortillas if you’re gluten free. Substitute: lettuce wraps, rice bowls, or quinoa for a lower-carb option
  • Plain Greek yogurt: Adds protein and delicious flavour. We always use greek yogurt instead of sour cream but feel free to use sour cream. Substitute: sour cream or dairy-free yogurt alternative
  • Shredded cheddar cheese: Substitute: Monterey Jack, Mexican blend, or dairy-free cheese
  • Salsa: Substitute: pico de gallo, guacamole, or sliced avocado
