Small Batch Pantry Tomato Soup

Ingredients

Tomato Soup
1 28-oz canned tomatoes
1 small onion
3 garlic cloves
1 tbsp Italian seasoning (or 1 tsp each thyme, oregano and basil)
½ tsp salt
½ tsp pepper
½ tsp chili flakes (optional)
2 tbsp butter
Grilled Cheese
Sliced bread
Butter
Shredded cheese

Directions

1. Dice onion and garlic.

2. Add butter to a medium sauce pan and heat over medium heat until the butter is melted.

3. Add onion and cook until translucent (around 4 minutes).

4. Stir in garlic and spices; cook for one minute.

5. Add canned tomatoes and broth; bring to a boil.

6. Lower heat, cover and gently simmer for 20 minutes.

7. Add soup to a blender and blend until smooth.

8. Option to serve soup with a dollop of yogurt or cream and a grilled cheese on the side.
