It will be hard to only have one so prepare yourself because my husband and I ate the entire plate. Zero regrets. Actually turned out to a be a balanced meal with protein and vegetables! You can easily make this vegetarian by leaving out the prosciutto so if you’re hosting you can offer both versions. This recipe would also be super delicious with brie cheese! I might have to make that version next!

How To Make Asparagus and Crispy Prosciutto Crostini

The Ingredients

Baguette
A crusty baguette creates the perfect base for crostini because it crisps up beautifully in the oven. Slice it into about ½-inch pieces for the best texture.
Substitutes: Ciabatta, sourdough, or any crusty artisan bread work well. For a gluten-free option, use your favorite gluten-free baguette or toast rounds.

Asparagus (10 spears)
Fresh asparagus adds a bright, slightly earthy flavor that screams Spring. Trim the woody ends and cut into small pieces so they sit nicely on the crostini.
Substitutes: Broccoli florets, green beans, or even roasted zucchini can work if asparagus isn’t available.

Prosciutto 
Prosciutto becomes wonderfully crispy and salty when baked, adding texture and depth to the crostini. A little goes a long way.
Substitutes: Thinly sliced bacon, pancetta, or even crispy turkey bacon. For a vegetarian option, simply omit or add toasted walnuts or pine nuts for crunch.

The Steps

  • Preheat oven to 375
  • Slice baguette into thin rounds
  • Trim asparagus & cut into 1inch slices
  • Arrange baguette pieces, asparagus & prosciutto on a large baking sheet lined with parchment paper (for easy clean up)
  • Drizzle the baguette thins with olive oil & season with salt
  • Drizzle the asparagus with olive oil & season with salt and pepper
  • Bake for 12-15 mins until the prosciutto is crispy
  • Top each crostini with Boursin, asparagus & crumbled crispy prosciutto
  • Option to drizzle with honey or hot honey or eat as is!
