  • Shred cheese
  • Assemble quesadillas by layering cheese, chicken, red onion, pineapple, drizzle of BBQ sauce and more cheese on one side of the tortilla
  • Fold and place on a lightly greased large skillet on medium-high heat
  • Cook for 3 minutes, flip and cook for another 2 minutes until the cheese has melted and the quesadilla is slightly charred
  • Repeat step 8 until all quesadillas are cooked
  • Cut into 3 and enjoy with additional BBQ sauce
