Tortillas
Large tortillas provide the perfect base for holding all the fillings and crisping up beautifully in a skillet. Flour tortillas are ideal for quesadillas because they fold easily and brown evenly.
Substitutes: Whole wheat tortillas, gluten-free tortillas, spinach wraps, low-carb wraps, or large corn tortillas (use two smaller ones if needed).
Chicken Breasts
Chicken breasts are lean, tender, and absorb seasoning and barbecue sauce exceptionally well.
Substitutes: Chicken thighs (juicier and more flavorful), rotisserie chicken, leftover grilled chicken, shredded chicken, turkey, or plant-based chicken alternatives.
Salt & Pepper
Salt and pepper enhance the natural flavor of the chicken and balance the sweetness of the barbecue sauce and pineapple.
Substitutes: Garlic salt, seasoned salt, or omit and rely on the BBQ sauce for seasoning.
Paprika
Paprika adds mild smokiness and depth without overpowering the dish.
Substitutes: Smoked paprika, chili powder, or a pinch of cumin.
Chili Powder
Chili powder adds warmth and subtle heat that complements the sweetness of the pineapple.
Substitutes: Taco seasoning, cayenne pepper (use less), chipotle powder, or omit for a milder flavor.
BBQ Sauce
Barbecue sauce brings tangy, smoky sweetness and acts as both seasoning and sauce for the filling.
Substitutes: Honey barbecue sauce, spicy BBQ sauce, homemade BBQ sauce, teriyaki sauce, or a mix of ketchup and a touch of honey and vinegar.
Red Onion
Red onion adds a crisp texture and mild sharpness that balances the rich cheese and sweet pineapple.
Substitutes: Yellow onion, white onion, shallots, green onions, or caramelized onions for a sweeter twist.
Pineapple
Pineapple adds juicy sweetness and a tropical contrast to the smoky barbecue chicken. Fresh pineapple offers the best texture, but canned works well too.
Substitutes: Mango, peach, grilled pineapple, canned pineapple (drained), or omit if you prefer a savory-only quesadilla.
Cheese (Mozzarella or Cheddar)
Mozzarella melts beautifully and keeps the quesadillas stretchy, while cheddar adds sharp, bold flavor.
Substitutes: Monterey Jack, Colby-Jack, pepper jack, mozzarella-cheddar blend, dairy-free shredded cheese, or smoked gouda for extra depth.
