Cooked Chicken Sausage (4 sausages)

Substitutes: Turkey sausage, pork sausage, rotisserie chicken, shredded chicken breast, or plant-based sausage.

Substitutes: Grape tomatoes, diced Roma tomatoes, canned diced tomatoes (drained), or sun-dried tomatoes for a deeper flavor.

The Steps

  • Slice sausage into 1 inch thin rounds
  • Dice zucchini & slice cherry tomatoes in half
  • In a large pot add a splash of olive (or avocado) oil, chicken sausage and veggies (if you have time, consider browning the sausage first then adding the vegetables)
  • Season with salt, pepper & garlic powder, stir cooking for 5 minutes until vegetables soften
  • Push veggies and sausage to the side & add Boursin cheese, orzo & broth
  • Cover and let simmer for 10 minutes
  • Remove cover & add 1 cup of water, stir until cheese melts and water is absorbed
  • Continue cooking for another 5 minutes while it thickens (add another splash of water if becomes too thick)
  • Remove from heat once orzo is cooked through
  • Serve immediately and enjoy (chili flakes are a perfect garnish with a touch of spice)
  • To reheat leftovers add a splash of water or broth & heat in the microwave or stove top until warmed through

Recipe Tips

If it's too watery, continue to cook until it thickens. If it's too thick, add another splash of water. 
You can use pork sausage but make sure to cook it first, then add the vegetables and continue the steps.

  • 1 pint cherry tomatoes
  • 1 medium zucchini
  • 1 Garlic & Herb Boursin Cheese
  • 2 cups chicken bone broth
  • 2 cups water
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp chili flakes optional

Instructions

    Made this for dinner tonight and the whole family loved it! I had cranberry chicken meatballs and used those instead of the chicken sausage and it worked! Both kids had seconds! Thanks for the recipe.

    My family really liked this. I will add more zucchini next time. I accidentally bought pork sausage, which isn’t our favorite. I think this would be good substituting chicken breast or shrimp for the sausage. So easy to cook in one pan. Will make again.
