Healthy No Bake Strawberry Oat Bars (Vegan, Gluten Free & Nut Free)

I am SO excited to be partnering with my favorite oat brand One Degree Organics to share this delicious recipe with you. I’ve been using their oats for the last 5+ years so it’s really a dream partnership. Their oats are certified organic, glyphosate free AND gluten free. They are also sprouted grains which means they are easier to digest. Oats are a huge part of our diet because they are packed with nutrients, they are affordable and so versatile (e.g. oatmeal, granola, banana bread etc.) I usually grab a big bag at Costco, so make sure to stock up and try out these yummy bars.

If you’re looking for a wholesome snack that the entire family will love, these healthy no bake strawberry oat bars are it. They’re naturally sweetened, completely vegan, gluten free, nut free, and school-approved — making them perfect for lunchboxes, after-school snacks, or an easy grab-and-go breakfast. My 3 year old LOVED THEM! They have been the perfect snack on the go. A nice break from processed snacks. The freeze dried strawberries are such a perfect addition. They are sweet and a little crunchy and you don’t have to worry about fresh strawberries going bad. We love to have a bag stocked in the pantry at all times.

What I love most about these bars is how simple and nourishing they are. There’s no refined sugar, no baking required, and no complicated ingredients. Just whole foods blended together into soft, chewy, strawberry-packed goodness. They’re lightly sweet, full of texture, and taste like a strawberry oatmeal cookie — but healthier.

How to Make Them (Quick Overview)

Blend the dates, milk, and vanilla until smooth. Stir in oats, chia seeds, hemp hearts, pumpkin seeds, coconut, and crushed freeze-dried strawberries. Press firmly into a lined pan, top with extra strawberry pieces, and refrigerate until set. Slice into bars and store in the fridge.

Because they’re no bake, pressing the mixture firmly is key to helping them hold together.

   

How To Make healthy no-bake strawberry oat bars

The Ingredients

Sprouted Rolled Oats

Sprouted oats are easier to digest and add a soft, hearty texture. They provide slow-digesting carbohydrates and fiber to keep you full.
Substitute: Regular rolled oats (certified gluten free if needed). Quick oats will work but create a softer texture.

Medjool Dates

Dates naturally sweeten the bars while acting as a binder. They add caramel-like richness without refined sugar.
Substitute: Deglet Noor dates (soak if dry), or raisins in a pinch (flavor will change slightly).

Dairy-Free Milk

Just a small amount helps everything blend smoothly.
Substitute: Oat milk, soy milk, coconut milk, or even water if needed.

Vanilla Extract

Enhances the strawberry flavor and adds warmth.
Substitute: Almond extract (if nut allergies aren’t a concern) or omit.

Chia Seeds

Add fiber, omega-3s, and help bind the mixture.
Substitute: Ground flaxseed for a similar binding effect.

Hemp Hearts

Boost plant-based protein and add a subtle nutty flavor (without actual nuts).
Substitute: Sunflower seeds or additional pumpkin seeds.

Pumpkin Seeds

Freeze-Dried Strawberries

What You Need

The Steps

  • Add pitted dates and milk to a food processor and blend until a smooth paste forms (you’ll need to scrape the sides a few times)
  • Transfer the date mixture to a bowl and add vanilla
  • Add oats, chia seeds, hemp hearts, pumpkin seeds and freeze dried strawberries (crumble them as you add them in or loosely chop them before adding)
  • Mix well (I found it easier to mix with my hand, pressing it together making sure the date mixture covers all the oats)
  • Grease a 9x9 inch dish and line with parchment paper
  • Transfer mixture and press down well. I like to use a glass to roll over and smooth it out.
  • Sprinkle with shredded coconut and additional crushed freeze-dried strawberries and press down again using the bottom of a glass
  • Place in the freeze for for a minimum of 30 minutes then remove and using a sharp knife cut into 12 squares
  • Store in the fridge for up to 5 days (or freeze for up to 3 months) and enjoy!

Recipe Tips

  • Make sure your dates are plump! If they have dried out, consider soaking them in hot water for 20 minutes then draining before adding to the blender.
  • Store in the fridge so they don't fall apart.
  • When cutting into squares, make sure you're using a sharp knife.
