It’s so filling and so satisfying. I usually do more of a tomato, onion, spinach combo BUT I had some jalapenos in my fridge and leftover bacon. So this HAD TO HAPPEN! Jalapeno popper anything is always a yes by me. I love spice and love the bacon jalapeno combo. So when I had all the ingredients I was so excited to make this jalapeno popper egg wrap happen! You can make this for breakfast, lunch OR dinner. Honestly any time of day it’s such a satisfying meal that comes together so quickly. I love adding cottage cheese for extra protein but you definitely don’t need to.

The Ingredients

Substitutes: ½ cup liquid egg whites (for lower fat), 1 whole egg + ¼ cup egg whites, Plant-based egg substitute

Cottage Cheese: This is the secret ingredient. When blended into the eggs, cottage cheese melts down and creates a creamy, slightly tangy texture while boosting protein. It mimics the creamy filling in a jalapeño popper but keeps the wrap lighter than cream cheese alone.

Substitutes: you can completely leave it out or use cream cheese (more indulgent), Greek yogurt (tangier), Ricotta

Salt & Pepper: Simple seasonings that enhance all the other flavors. Don’t skip them — especially the pepper, which complements the jalapeño heat.

What You Need

The Steps

  • In a small bowl whisk together eggs, cottage cheese, salt and pepper
  • Heat a medium skillet over medium heat with olive or avocado oil, twirl the pan to ensure the oil covers it fully
  • Add egg mixture, twirl pan again to ensure the eggs coat the entire pan. Let cook for a few minutes until no longer runny.
  • Place a tortilla on top, press down and carefully slide a wide spatula underneath. Lift it up and flip it over.
  • Add a sprinkle of cheese to one side
  • Add bacon and jalapenos on top of the cheese and cover with remaining cheese
  • Fold the tortilla in half, press down and cook for 1 minute
  • Flip and cook for another 30 seconds
  • Remove from heat, cut in half and enjoy

  • Cook your bacon ahead of time or use leftover bacon and this becomes a 10 minute meal!
  • You can swap the bacon and jalapenos for other veggies like tomatoes, onion, spinach etc.
  • Use whatever cheese you have on hand. This recipe also works great without the cottage cheese (it just adds a little more protein).
  • Make sure your pan is warm and fully coated with oil before adding the eggs. To help them set faster twirl your pan so the runny egg spreads more evenly and cooks faster.
