When dinner needs to be quick, comforting, and full of flavor, these one pot beef and broccoli ramen noodles are always a winner. Made with minimal ingredients and cooked entirely in one pot, this easy weeknight dinner comes together fast and delivers big, takeout-style flavor at home. It’s one of those recipes you’ll turn to again and again when time is tight but you still want something delicious on the table.

This dish is inspired by classic beef and broccoli, but with a cozy twist thanks to ramen noodles. Everything cooks together in one pot, allowing the noodles to soak up the savory sauce and making cleanup incredibly easy.

Why You’ll Love This One Pot Beef and Broccoli Ramen

There are so many reasons this recipe earns a spot in our regular dinner rotation. First, it’s a true one pot meal, which means fewer dishes and less stress at the end of the day. Second, it uses simple, affordable ingredients that you likely already have on hand.

The beef cooks quickly and becomes tender and flavorful, while the broccoli adds freshness and texture. The ramen noodles bring everything together, absorbing the rich sauce and creating a comforting, slurp-worthy dish that feels both familiar and exciting.

Best of all, this recipe is perfect for busy weeknights. From start to finish, it takes less than 30 minutes and requires very little prep.

Minimal Ingredients, Maximum Flavor

What makes these beef and broccoli ramen noodles so good is how much flavor you get from such a short ingredient list. Browning the beef first builds a savory base, while the sauce adds that classic salty-sweet balance everyone loves. Cooking the ramen directly in the same pot allows the noodles to soak up every bit of flavor, resulting in a rich, satisfying dish without any extra effort.

Broccoli not only adds color and crunch but also balances the richness of the beef and noodles. It cooks just until tender, making it the perfect vegetable for this quick, one pot dinner.

Perfect for Family Dinners and Leftovers

This easy ramen noodle dinner is a hit with both kids and adults. The flavors are familiar and comforting, making it ideal for family meals, while still being bold enough to feel exciting. You can easily adjust the seasoning to suit your taste or add extra veggies if you’d like.

Leftovers reheat beautifully, making this dish great for lunch the next day. The noodles continue to absorb the sauce, making the flavors even better after they’ve had time to sit.

How To Make One Pot Beef and Broccoli Ramen

The Ingredients

  • 3 packs of instant ramen
Instant ramen makes this dish quick, budget-friendly, and comforting. The noodles cook fast and soak up the flavorful broth and sauce beautifully, making them perfect for easy weeknight meals. My favorite are Momofuku noodles but you can use any brand!
Substitutes: Fresh ramen noodles, udon noodles, rice noodles (if you’re gluten free), or even spaghetti in a pinch (cook separately if needed).

  • 2 cups beef bone broth
Beef bone broth adds richness and depth while boosting protein and nutrients. It creates a savory base that elevates the ramen beyond basic instant noodles. My go to is Kettle & Fire (use code happyandfull for 20% off your order!)
Substitutes: Regular beef broth, chicken broth, vegetable broth, or water with a bouillon cube.

  • 1 lb lean ground beef
Lean ground beef keeps the dish hearty without being overly greasy. It cooks quickly and brings classic savory flavor that pairs perfectly with soy or teriyaki sauce. I like using grass fed extra lean ground beef. There usually isn’t any extra grease to drain.
Substitutes: Ground turkey, ground chicken, ground pork, plant-based ground meat, or thinly sliced beef.

  • 1 head of broccoli
Broccoli adds freshness, crunch, and a pop of green, balancing the richness of the beef and noodles. It cooks quickly and holds its texture well in ramen dishes.
Substitutes: Snow peas, bell peppers, bok choy, green beans, or frozen broccoli florets.

  • soy sauce or your favorite teriyaki sauce
Soy sauce delivers salty, umami-rich flavor, while teriyaki adds a slightly sweeter, more glazed finish. Both pair beautifully with beef and ramen noodles.
Substitutes: Tamari (gluten-free), coconut aminos, hoisin sauce thinned with water, or a mix of soy sauce and honey.

These simple ingredients come together to create a comforting, flavorful ramen dish that’s easy to customize and perfect for busy weeknights.
