A must make dinner!

Sheet Pan Big Mac Quesadilla (Viral Tortilla Fold Hack)

If you’ve seen the viral tortilla fold trend, this Sheet Pan Big Mac Quesadilla takes it to the next level. Think all the flavors of a classic Big Mac—savory beef, melty cheese, tangy pickles, crisp lettuce, and that signature “special sauce”—all layered into a giant folded tortilla and baked to crispy perfection on a sheet pan.

It’s quick, customizable, and perfect for feeding a crowd (or meal prepping for the week). No flipping burgers, no standing at the stove—just assemble, fold, bake, and slice. I would recommend adding a side: we had air fried sweet potato! But a french fries or any potato pairs perfectly. I love that you get the same burger taste but with WAY less effort. That hardest part? Dicing onion, pickles and shredding cheese. Everything else comes together so quickly. The folding method is super easy and fun too! No need to stand over the stove flipping one quesadilla after the other.

Why You’ll Love This Recipe

  • Feeds a crowd with minimal effort
  • Crispy, cheesy, and packed with flavor
  • Fun twist on a fast food favorite
  • Perfect for weeknights or parties

Tips for Success

  • Pressing with a second sheet pan helps everything stay compact and crispy
  • Don’t skip the sauce—it’s what gives it that Big Mac flavor
  • Let it rest before slicing so it holds together better

Easy Variations

  • Swap ground beef for ground turkey or chicken
  • Add sesame seeds on top for that “burger bun” feel
  • Make it low-carb with low-carb tortillas
  • Add extra toppings like tomatoes or bacon

This Sheet Pan Big Mac Quesadilla is the ultimate mashup of convenience and comfort food. It’s crispy on the outside, loaded on the inside, and guaranteed to be a hit whether you’re feeding your family or making something fun and viral-worthy. This recipes serves 4 people (generously) but can me stretched to 6-8 people if you are serving it with other sides like fries and salad.

If you’re looking for a new and easy week night dinner idea, you have to try this sheet pan big mac quesadilla! It’s fun, packed with flavour and really easy to make. In fact, I liked it so much i’ll try this using a regular taco filling with beef and/or chicken! So many fun variations you can do! Let me know if you try it!

How To Make Sheet Pan Big Mac Quesadilla

The Ingredients

  • 1 lb ground beef: Classic Big Mac flavor and richness. I like using extra lean beef because then there’s nothing to drain!
Substitute: Ground turkey, chicken, or plant-based ground for a lighter option

  • 1 tsp garlic powder
Substitute: 2 cloves fresh garlic, minced
  • 1 tsp onion powder
Substitute: Finely diced onion cooked with the beef

  • large flour tortillas (burrito size): Holds everything together and crisps up in the oven
Substitute: Whole wheat tortillas, low-carb wraps, or gluten-free tortillas

  • shredded cheddar cheese: Melty, sharp flavor
Substitute: American cheese (more authentic), mozzarella (milder), or dairy-free cheese

  • diced onion: Adds crunch and bite
Substitute: red onion, shallots or green onions for a milder taste OR you can omit

  • pickles: Essential tangy flavor. I personally think DILL pickles are the superior pickle!
Substitute: Relish or pickled cucumbers or leave out

  • shredded lettuce (added after baking): Fresh crunch
Substitute: Iceberg, romaine, or even shredded cabbage

  • mayo: Creamy base
Substitute: Greek yogurt (lighter) or dairy-free mayo or even blended cottage cheese for extra protein

  • ketchup: adds sweetness and flavour

  • mustard: adds more flavour but if you’re in a pinch you can leave out
Substitute: Dijon for a slightly sharper flavor

  • pickle juice: Adds tang
    Substitute: white vinegar, lemon juice

What You Need

The Steps

  • Preheat oven to 400°F and line a sheet pan with parchment paper or grease it well with butter or oil
  • In a skillet over medium heat, cook the ground beef with salt, pepper, garlic powder, and onion powder until browned. Drain excess grease and set aside.
  • In a small bowl, mix together all sauce ingredients until smooth. Set aside.
  • Lay the tortillas on the sheet pan overlapping slightly and keeping half of the tortilla off the sheet (so you can fold in afterwards)
  • Spread the cooked beef evenly over the tortillas
  • Sprinkle cheese on top
  • Add pickles and onions
  • Drizzle generously with special sauce (leave some for dipping)
  • Finish with another layer of cheese
  • Fold each side of the tortillas inward toward the center, creating a sealed, layered wrap.
  • Place another sheet pan on top (to press it down) and bake for 15–20 minutes, until golden and crispy.
  • Remove from the oven, let cool slightly and slice. Add shredded lettuce before serving for that classic Big Mac crunch.

Recipe Tips

If you're feeding a crowd you can stretch this recipe to feed 6-8 people but I recommend having at least 2 sides (sweet potatoes or regular fries and a salad or roasted vegetables).
